Herb Rolls

Tis the week before Thanksgiving, and here I am making new kinds of bread. I suppose it's better than getting ugly about all I'm going to have to get done, right? I'll let you all know about that later, when I know all about that; suffice it to say that there will be plenty of Marjie activity in this little corner of the world. I did get my flu shot on Friday, which caused me to spend the weekend feeling sickly (am I the only one affected that way by flu shots?), but I now expect to stay healthy through the season. I promised my doctor he will not be pleased if I turn up sick after flu and pneumonia shots!

Anyway, you are here for the rolls. And they were delicious. Try t
hem; you won't be disappointed.

HERB ROLLS

1-1/4 cups warm milk
6 tsp (2 packets) yeast
4 cups flour (plus another cup, if needed)
1 egg

1 tsp salt
1 tbsp sugar
1 tbsp oregano

1 tbsp sage
1/4 cup chopped chives

Pour the warm milk in your bread machine or mixing bowl. Sprinkle the yeast on top of it, and add the ingredients in the order given. Process according to my directions (link in the side bar), and let the dough rise about 10 minutes. Punch it down, divide into 12 pieces, and roll into balls. Place the rolls on a greased baking sheet, brush with warm water mixed with a b
it of sugar, let them rise about 20 minutes, until doubled in size, and bake at 375F for 16 to 20 minutes, or until they are whatever shade of golden brown you prefer.
These were great with our chicken dinner Thursday night (the carcass was the basis for Friday night's chicken soup, to help us through flu shot weekend).
They also made great sandwiches the next day for lunch, warmed up and served with just a touch of Dijon mustard, chicken, lettuce, tomatoes and cheese. Of course, lunch would not be the same if not served on a Pooh plate, right? And we can all now know, thanks to Monica and Bundy, that Pooh is known as Petr Plys in Denmark and Ole Brumm in Norway.

I really like bread with stuff in it and these rolls look delicious. Sandwiches made from leftover rolls and meat is a staple around here for several lunches after the Thanksgiving and Christmas meals. I can't even imagine what it must be like around your placeat holiday mealtime - a couple of big turkeys and a ham or two should do it. :-)

Umm.. those look good. Reminds me that I have a bread recipe that we like and I haven't made bread in ages. Maybe that would be fun this week.

Nearly everyone I know who has had a flu or pneumonia shot this year has had complications. I'm not at all inclined to get mine at the moment.

So - is it the salt or sugar that makes yeast work? Maybe that's what's wrong with my bread.

And yes - I always react that way to shots - being injected with the flu so you can learn to fight it isn't fun. But your rolls looks yummy! g

I caught the flu after my flu shot and have been sick for 6 days! UGH... darn shot.

The herb rolls look fantastic! I may have to make them tonight.

Those rolls looks so fluffy!
After I decided to have a flu shot last year (because of all the swine flu drama) my sense of smell almost disappeared for quite a while, luckily it came back!

And ANOTHER roll recipe for me to try! I've been doing the same thing this past week (found 2 fantastic recipes on the King Arthur site, FWIW).

I had my first 'flu shot a few years ago (under protest), and I spent the weekend sick. Thanks, doc.

Freezing the super abundant chivre was a brillo thing to do - just look at your scrummy herb rolls.

A flu shot always knocks the immune system about as it does the right reaction, and builds new immunity, only it aint so pleasant for a few days - still is way better than a few weeks of full-blown Influenza; something few of us in the "Western World" have to face very often. Your chicken soup would have been lovely any time of the year and health season but most especially right now for your famdamily!!!

yum! this is totally random, but why is the name herb pronounced using the h, but you don't say it when referring to the green stuff? :)
