Jeff bought me this cookbook for my birthday last year. He's a great son, isn't he? This is another cookbook with a lot of verbiage and not as many recipes as one might think, but it's pretty.
Anyway, in searching for a new way to cook boring old veggies, I stumbled upon this recipe. It was easy, and gave a while lot more flavor to green beans.
GREEN BEANS PROVENCAL
1 pound whole green beans
1/2 tsp salt
1/2 cup boiling water
2 tbsp olive oil
2 cloves garlic, minced
1/4 cup chopped parsley leaves
2 tbsp butter
Add the salt to boiling water, add the green beans, and cook for 4 to 5 minutes, until tender-crisp. Pour into a colander to drain and cover with the pot lid to retain the heat. In the same pan, heat the olive oil, then add the garlic and cook for a minute. Add the parsley and cook until it wilts. Return the beans to the pan, stir to coat and heat through. Turn off the heat, add the butter and cover the pan for a minute, until the butter melts. Stir again and serve.
And since I have no pictures of this side dish, you can instead see what my refrigerators look like the day after I get a medium sized food delivery. Of course, there's a separate, small refrigerator which holds 8 gallons of milk, and two freezers for meats and frozen veggies.
I just thought you might like a glance at some of the lunacy which is my life.

That looks like a good idea for beans. We eat a lot of green beans and I run out of ideas. We have two refrigerators, too. I don't know how we'd manage with only one, but ours aren't as loaded as yours.

The green beans look amazing. In regards to your food order - HOLY COW! I can't imagine having so much food in my home but I also can't imagine having 9 kids! You are amazing lady!

Just me and the hubby and 4 cats and one straggler cat we feed..I shop now and then we are retired but active, I still work nearly full time, hubby likes to library and electronic stores it..but I cook everyday, your green beans look yummy..I will try it in our tiny home. Wanted big family got one child, but she always brought lots of people to our home for food, fellowship and kindnesses, only girl grandchild for nearly 23 years oh, my spoiled by her boy cousins, they used to hold her like a sack of spuds and always played nicely with the only girl grand baby, she is loved, you remind me of her a lot, she can sew, cook, knit and do most everything..she is spetacular to us and her many aunts, uncles and cousins..love your blog..your frige looks great and so clean and neat, how do you do all you do??? your an amazing person, momma and all around good human being!

I'm delighted to learn from the comments that two fridges aren't just a PA thing. I'm thinking about getting a second and it's only me and Marion! (perhaps refrigerators have downsized:)
