What says frozen confection more than 22 degree January nights? Well, it seemed warm by comparison to sub-zero temperatures. And I needed to use this jellied cranberry sauce. Really, I did!
CRANBERRY SHERBET
1-1/2 cups jellied cranberry sauce
1/4 cup orange juice
1/2 cup sugar
1 egg white, beaten stiff
1/2 cup cream, whipped
Beat the cranberry sauce with the orange juice and sugar until well combined. Put in the freezer about an hour, until slushy. Stir in the beaten egg white and whipped cream, combining well, and process in your ice cream maker, or return to the freezer, stirring every hour or so until it's pretty solid.
Slice some banana on top if you want to feel like you're eating a really healthy dessert!
This is a really easy ice cream to make, not even requiring any fancy equipment. The recipe came from my 1950s Fannie Farmer cookbook, and the introduction to it says it's great as an accompaniment to a chicken or turkey dinner. I have the feeling Mr. Farmer wrote that, and when I read it to my dearly beloved, he said, "So, what's wrong with sherbet as a side dish?" I rest my case.
Have a great weekend, everyone!

I think sherbet makes a mighty fine side dish.
Maybe I'm not wierd after all, but it seems as though I've always wanted to stop by the ice cream shop more in the winter than summer. The shebert looks delicious.
I'm pretty sure that while JB might not like it as a side dish, he'd certainly accept it as a condiment.
You and your ice cream. I bought whole cranberries to string for the birds - guess I need to do that, eh? g

Sounds so refreshing but the bananas make it comfort food for me.
Oh yum! The only problem I can see with it is that I think it would make a very fine MAIN dish on some nights!
But maybe that's just me. ;)
I DID stop by the ice cream shop last week. I was freezing, but it still tasted good. This sherbet looks delicious!
Never thought of sherbet as a side dish but will now! I love making these recipes.
Oh, just to add...when I was in Italy it was January. On a tour to Siena I had to have gelato. They all thought I was nuts because it was so cold. But I loved it.
And I thought it was me. I have had such a desire for a root beer float I may just have to give in.
Or, I could whip up this sherbet and be more than satisfied.
Thanks for sharing, Marjie...
I love sherbet but have never tried making it at home.. this looks refreshing and delicious Marjie.
we were in the 50s yesterday, and i think that calls for some cold refreshment! excellent way to make use of cranberry sauce. :)
I'm pretty sure the Knight STILL wouldn't eat it - what with that cranberry stuff and all...
It sounds good to me!
