Blueberry Cobbler

Appearances on this blog notwithstanding, I love a good canned pie filling. Not that I use them in pies, mind you, but they are handy things to have around. Why, if not for pies? Well, for cobbler, of course! This was Monday night's selection, and it was very popular!

BLUEBERRY COBBLER

1 can blueberry pie filling
1/2 cup flour
1/2 cup sugar
1/2 tsp baking powder
1/4 tsp salt
2 tbsp butter, softened
1/2 tsp vanilla extract
1 egg

Spread the pie filling in an 8" or 9" square baking pan. Put the flour, sugar, powder and salt in a medium sized mixing bowl. Mash the butter in with a fork, then stir in the vanilla and egg. Drop by spoonsful on top of the pie filling, and bake at 350F for about 40 minutes, until the crust is nicely browned. Serve with whipped cream, ice cream or both.
Of course, you can use your favorite pie filling flavor for this. I had blueberry, and so that became my favorite for Monday night!

Mmmmm! Bluuuueberries! One of my all-time favorite things to eat. I have a freezer shelf full of blueberries, so I'm going to see if I can whip this up without using the "filling". I doubt if we could get blueberry pie filling at the store here anyway.

I love cobblers. When I rearranged my freezer I found some jars of peach pie filling that I had "canned" last summer. This would be perfect.

Looks great but I'd rather use cherry filling....which I keep around...and not for pies either.

Thank you for this - at 79 my dear Dad has become lactose intolerant. I could make this for him replacing the butter with margarine, and using cooked apples from his freezer.

Oh how I wish it were blueberry season again. I just didn't freeze as many as usual this year. Pie filling will work and your cobbler looks mighty good to me!

the fact of the matter is that blueberries are one fruit for which canned pie filling is cheaper than going the fresh fruit route. a heck of a lot easier too. :)

In Buffalo, NY on the news they have a chef, whose famous saying is, "Ooh, it's so good!" I'm sure he'd say that of your blueberry cobbler!
