Macaroons!

I end up with a lot of egg whites almost every time I make ice cream. My dearly beloved loves ice cream, so I make a lot of ice cream. I'm guessing you see a pattern here....

So, last night I didn't feel like making a fancy dessert. That wasn't helped any by the fact that some idiot ran my house out of confectioner's sugar. I don't know who the idiot was, but I suspect I'll find her in a mirror at some point. Anyway, I decided some variation on macaroons would be in order. Bear in mind that my house is filled with people who profess to hate coconut, so this had to be a sneaky attack. And, given that I ate two last night, and my dearly beloved ate the last 5 this morning before his coffee had even finished brewing, I'm guessing that these were a success.

WALNUT MACAROONS

3 egg whites
1 cup sugar
1/2 cup walnuts, finely chopped
1/4 cup shredded coconut
1 tsp almond extract

Beat the egg whites until stiff, then beat in the extract and sugar. Beat until they stand in hard peaks. With a rubber spatula, gently fold in the walnuts and (optional) coconut. Bake at 325F for about 17 minutes, until light gold. Makes about 30.

Look at this little beauty! Aren't you hungry? I am.

Paula, these are safe for your baby. For the rest of us, they're (sorta) low calorie and (sorta) healthy! Enjoy your weekends, everyone!

I. Love. Macaroons! You make everything sound so easy; I've always heard that these are finicky to prepare. Your instructions don't call for any hard steps, so this might just be the recipe for me. My little gal would love the look of these, and I suppose I could share if I had to. :-)

Lovely, lovely, and super airey. Too bad I can't do the shredded coconut. Your dear ones get to have a wonderful desert.

And is so, so good for dear Paula's darling gluten free sweetie. I guess Paula's bigger kids might enjoy, lol and heaps of love to Marjie and Paula.

Mmmm... "sorta" sounds good enough for me! I have 3 dozen free range eggs staring at me at this exact moment, so I guess I'm gonna have to make some macaroons!
They look and sound delicious...specially the walnuts part!!!
