Garden Tuesday: Salads

Boy, if I didn't know this was "gardening by the square foot", I'd swear I had a lovely thicket going on here, wouldn't you?
These are the first baby tomatoes I've seen. I don't really like the fact that I can't focus the digital camera. I really love the pictures I take with my good old Leica, but I really enjoy the convenience of digital. Dilemmas in life.

And my first baby zucchini. Lots of people curse the prolific zucchini. I love them. I love them raw, cooked, in bread, however I can get them. I'm thinking of shredding some and freezing them so I can enjoy zucchini bread through the winter. We'll see how that goes.

Of course, with my bountiful lettuce, on taco night, I decided I didn't want to get my hands dirty. Instead, I made myself a taco salad. Who needs the tortilla, anyway?

And lunch: Hawaiian salad, green lettuce with tomatoes, pineapple, shredded coconut and balsamic vinaigrette dressing.

How are your gardens growing?

My lettuce is going nuts. Seriously nuts. And I've spinach out the ying/yang. I think I have two baby pumkins and I haven't really looked at the rest. Although we have been eating berries and cherry tomatoes fresh from the garden. Maybe I should go check on it. g

wow I would be eating those zucchini flowers as fast as I found them - your salads look great - my window box tomatoes are having a blight - the little buggers are as big as big marbles....ripening though

We had a garden out back for years and I used to get so excited when something new popped up. Your garden is lovely ♥ There is nothing quite like fresh veggies in the summer. Those salads look delicious.

My gardens of cactus are even dying in this heat!

Yup, ol' Jeremy died.

Both salads look great but the coconut/pineapple is calling my name.

It's my belief that you can never have too many zucchini's. NEVER!
I love 'em just about any way, but the Old Guy would kill for a never-ending supply of ratatouille, so every summer, he gets to eat it 'til it's coming out of his ears!

Me? I'm a zucchini bread kind of girl... and when we lived in a small country town, I was the one person in town who always left my car windows down and the door unlocked, so people could leave me all their extra zucchini!

Your square foot garden is looking pretty awesome Marjie :-)

I was surprised today...my one little tomato is growing and there are more flowers ! Maybe there will be a small tomato harvest after all - cross fingers.

I have shredded zucchini for winter usage. It worked great. I shredded the zucchini and then froze it in whatever the measurement of squash was that I needed for the recipe.

Your garden is looking wonderful. My uncle's garden is being ravished by 4-legged wild creatures this summer so we aren't getting to enjoy the produce per usual. :(

I am so envious of your garden! Great way to put all of that lettuce to use. I haven't had a taco salad in ages and now I really, really want one.
