Kitchen Sink Chicken Soup

....so called because it seems I put everything but the kitchen sink in this soup.

It was cold and rainy Friday afternoon, and soup seemed like a good idea. Out of the freezer came a chicken carcass, into a pot with water it went.

KITCHEN SINK CHICKEN SOUP

1 Chicken Carcass

Water to cover
1 to 2 tsp salt
1 large onion, minced
3 carrots, peeled and grated
4 stalks celery, finely chopped
1 bunch parsley, finely minced
2 t 3 tsp poultry seasoning
2 cups leftover cooked long grain and wild rice mixture


Place the chicken carcass in the pot, cover with water, and add salt and the onion and carrot. Bring to a boil and simmer until the meat falls off the bones; fish the bones out. Add the celery, parsley and wild rice; heat through, taste to correct seasonings, and serve. Excellent refrigerated and reheated the next day.

This soup didn't last long, obviously, and will doubtless make a repeat performance next weekend, when one of my daughters will be coming home to work on a college project involving her little brothers.

I'll have to file this away with the rest of your recipes I'm going to try. I wanted chicken soup a few days ago and this would have been perfect.

I have never thought to freeze chicken a chicken carcus...I usually make the stock then freeze it. The soup sounds perfectly delicious Marjie.

Are you guys in for snow again today? I think I see it in your neck of the woods. Hope it doesn't last long, and melts quickly. To answer your question, Calvert did not completely do away with their 3rd grade Famous Americans material. Rather, they added in a second textbook, Communities, and are using it for "Social Studies". In addition, they still retained the Famous Americans book, and have fit it into the schedule under the subject title of "Reading Enrichment", except none of the written assignments are required anymore, just the reading and discussion. I think they changed the Social Studies in response to public schools who are using Calvert under their charter option, and have to meet state standards that early in Social Studies. I am glad your local high school is a good one. I cannot say the same for our school system here. Perhaps if I were still in N.J. I would feel differently, too. Have a blessed day!

glad to see your chicken carcasses don't go to waste. you've put it to excellent use here while also getting rid of some leftover rice--bravo!
