Rice Pudding

Hope you all had a lovely Square Root Day yesterday. Having studied squares and square roots in 7th grade math the day previous, we were primed. Learned a little about how to find an imperfect square root, and I even cut my carrots square for the occasion. Yes, I'm an odd duck.

But it was an awfully cold Square Root Day. So we actually had poac
hed chicken for dinner, along with a nice, warm rice pudding for dessert. Some of the kids were less than enthused about the whole idea of rice pudding, but I love the stuff. This one was baked in the oven, helping to heat my house, and stave off the 15 degree weather. Have I mentioned that I really, really, really can't wait for spring to arrive? If I didn't sunburn in about 12 minutes, I'd have to migrate to a warmer climate.

OVEN BAKED RICE PUDDING


3 eggs
1-1/4 cup milk
1/4 cup heavy cream
1/3 cup sugar
1 tsp vanilla extract
1 tbsp cinnamon
1 cup cooked rice

1/2 cup raisins

Combine all ingredients in a baking dish. Bake at 325F for 45 to 55 minutes, stirring once after about 30 minutes. Serves 6.

Of course, I doubled this. And there was still some left for my breakfast today. I hope you all don't mind, but I'm off to fill my face.

And, to prove I'm a complete nutcase, Happy Grammar Day. This is the only day whose date is a complete sentence: March 4th. March forth. Maybe we'll make punctuation pretzels today.

This looks delicious and I'm glad you had enough for your breakfast. Rice pudding is one of those retro dishes that has come back in fashion again. Love it!

I love rice pudding but JB hates it. I also love bread pudding. I don't think you're strange. Can't wait to see what you do for Grammar Day. Today is also my co-workers anniversary and he thought it was appropriate as they were "Marching Forth" into their new life together. Dork! g

I'm glad to see you find it funny with the date, it means at least there is one more out there with the same weird humor as I have!
The rice pudding looks yummy! Maybe I'll try your version one day!

i love how you say "of course, i doubled this." well duh. :) and for breakfast? sounds completely appropriate to me. and please, do march forth with some pretzels. :)

Hi Marjie- I have been reading your blog for quite some time but have never left a comment before. (I came across it by accident one day and just kept returning!) I am hoping you can help me with advice- I recently recieved a bread machine and would like to start right away trying recipes. I know you use your machine primarily as a mixer and then bake them in the oven. Since I am new at this, should I start with just using the machine? Do you have a recipe book for bread that you particularly recommend?

March forth!?! Ha! You can always make me smile! This pudding certainly makes me smile. I actually prefer the baked version of rice pudding; I just love that custard like texture it creates. I've not put raisins in it before, but I love adding cinnamon! Now, who didn't want whipped cream on their portion? So glad that you got to eat some of this! YUM! Hope it's warmer over there today. I wondered if you guys were getting hit by the latest arctic blast. Hey, you could always migrate to a drizzlier climate! :-)

Happy "March Forth" to you too! It's a complete sentence, it's a command and it's my baby's birthday and our good friend's birthday too. The friend has taken great pleasure in sharing this fact about March 4th since B. was born 18 years ago!

I've been seriously craving some rice pudding, but my Aussie guy's idea of what Rice pudding is, and what I KNOW is right, is keeping us arguing. The more we argue, the less I want to make it for him. Oh, what a vicious circle!
See, his mother used to cook white rice. She then put it in a bowl and just poured store-bought custard over it. Voila... rice pudding.
Excuse me while I go barf.
At least I won't have to share my baked version. ;-)

I love rice pudding, if i made it I'd probably be the only one that would eat it too...come to thinkof it , that's not a bad thing is it!
