Breakfast Parfaits

This delightful little breakfast takes about 2 minutes to assemble, looks really pretty, and fills you for a while at a relatively low calorie count. What's not to love?

BREAKFAST PARFAIT

For each parfait:

8 ounces plain yogurt
4 ounces blueberry compote (approx)
1/4 cup granola

Find your prettiest dessert glass. Layer in it blueberry compote, half the yogurt, half the granola, more blueberry compote, the balance of the yogurt, the balance of the granola, and another dollop of blueberry compote. Voila! Breakfast!

I loved this. My dearly beloved made faces at the yogurt, and told me it tastes like sour milk. Maybe next time I should stir in a little vanilla and some sweetener?

Thor wouldn't have told me it was sour. He'd have asked for more.

We still miss Thor too. And the fur-girls LOVE yogurt, even my green yogurt. The Knight prefers the fruit in the bottom yogurt. Hem.

I apologize for not visiting my favorite blogs lately, and i promise to do some catching-up with everyone in the next few days. We are experiencing cooler weather starting today (Thursday) and as for myself I'm looking forward to falls return to the Lancaster Pennsylvania area. You know what I miss most about my dog? Her face. Especially in the morning. So Marjie, that breakfast cocktail sounds like a really good idea.

I'm making yogurt today! It's "easy peasy" and great to cook with. I have tons of blueberries in the freezer. Yum!

I miss Thor, too...

Dear Larry's comment had me truely laughing out aloud - granola, yoghurt and blueberry compote topped with a fried egg - I'd have to have a little sea salt on the egg!

While I can no longer eat granola* (known here as muesli) I can imagine all the flavours and textures - excluding Larry's egg. What a great way to treat your beloved to a fine breakfast.

P.S. - I think Darling Thor would have wanted at least a full sized serving, if not double sized - and he would have been right!!!

I love the tartness of the yogurt and the fresh sweetness of the blueberry compote, plus the crunch of the granola. In my book, this is the breakfastof champions!

I agree with you man. I don't like the sour aftertaste of yogurt so I put vanilla pudding in my morning parfait. Rob and the dogs all like yogurt. We use blueberries, strawberries and bananas. This is such a great way to start a day.
