White Cake

I really enjoy white cake, but I also suffer from a real aversion to using multiple bowls for one cake. Yes, I have issues, but then, who doesn't? Anyway, while scanning the Fannie Farmer cookbook, I found this recipe for a one bowl white cake. Excellent! Now I also have to make ice cream to use up the egg yolks - as soon as the restaurant supply house arrives this afternoon with my shipment, including a case of cream....

ONE BOWL WHITE CAKE

2 cups flour
1 tsp salt
1-1/2 cups sugar
1/2 cup vegetable oil
2/3 cup milk
3 tsp baking powder
1/2 cup milk
4 egg whites
1 tsp vanilla extract

Sift together the flour, salt and sugar, and mix with the oil and 2/3 cup milk for one minute. Add the remaining ingredients and beat at high speed for 2 to 3 minutes, until the mixture is well combined and somewhat fluffy. Pour into a Bundt pan and bake at 350F for 35 to 40 minutes, or until the cake tests done.
A good, relatively light frosting for this cake also came from Fannie Farmer: Butter frosting

Beat 1/4 cup butter until fluffy and light; add 1 cup confectioners sugar and 1 tsp almond extract. Set aside. Beat 2 egg whites until stiff with 1 cup confectioners sugar. Add the butter mix and beat well. Add more confectioner's sugar if desired to achieve the right consistency. Spread on the cake and enjoy! There's only 1/4 of a cake left this morning, so it must have been good, right?

You have the prettiest serving pieces. There's something special about elevated cake dishes, and yours looks so inviting sitting there on that plate. I love the bundt shape, too. Happy Mom's day back at ya!

I very rarely make white cakes and this year my son asked for a white B-Day cake. This one looks delicious.

Mother's Day will be a carrot cake or Apple crisp- I am leaning towards apple crisp....

This sounds wonderful Marjie. I love white cake and white frosting. I hope to see a post next week about how nine children got busy taking care of their mom on Mother's Day! I know they know how! I also know you can;t sit still...micro manae is what they call it! lol Have a Happy Mother's Day!

With my folks we've never done the Mothers' Day celebration. Dear Mum's birthday is on the 29th and is the special day celebrated.

However, while I was still living at home and a student, and when then working, I would clean the oven for her each Mothers' Day.

I hope your lovely family come up with very pleasant and special somethings for you - is so well deserved,
