Chocolate Dessert #146

This is for Sue, and all you other chocolate fiends out there, from my 365 Chocolate Desserts cookbook. Yes, I know Sue wants me to decide I don't love this cookbook and send it directly to her, because she loves chocolate that much. I'm just not ready to relinquish it yet. So you'll have to settle for another recipe.

This one is made with boxes, and is very easy. Of course, box mixes being in short supply in my house, I created my own "box mix" base, just in case anyone else out there is supermarket-phobic and box-mix-lacking.

CHOCOLATE DESSERT #146:

Chocolate Banana Bundt Cake

1 Devils Foods Cake Mix, without pudding*
2 bananas, mashed
1 box instant vanilla, chocolate or butterscotch pudding mix
4 eggs
1 cup sour cream
1/4 cup oil
1/2 cup chopped nuts

Dump all ingredients in a bowl. Beat for 3 minutes. Turn into a greased bundt pan. Bake at 350F for 50 to 60 minutes, until a toothpick in the center of the cake comes out clean. Frost with whatever icing suits your fancy.
*If you have no cake mix, use these handy dandy dry ingredients:

1-3/4 cups flour
1-1/2 cup sugar
1/3 cup cocoa powder
1-1/4 tsp baking soda
1 tsp salt
4 tbsp buttermilk powder or dry milk powder

Proceed as above, dumping all ingredients in the bowl.

See? Absurdly easy. However, I never said this would be low calorie. Just easy and good.

Hmmm... Despite claiming he doesn't like chocolate, the Knight will eat Devil's Food, loves bananas...

Yum, This one is a winer. I'm always looking for ways to use up those last two bananas that are a little too soft to eat all by themselves.

When I was a teenager, my Mom and I decided to not use any mixes, so with just one exception, my chocolate cherry cake, I always make my cakes from scratch.

There's just something special about cakes baked in a bundt pan. I bet the flavor with those different pudding mixes really ramps up the flavor and texture of the cake. I'll have a slice with some tea, please. :-)

I think you should just send the book along to Sue already (I'll send you her addy) and quit torturing us with these fabulous looking cakes. The only saving grace is I'm never going to make one. No matter how good they look - I'm no baker. g

Mmmm! This sounds delish! Me? I'm basically a box girl... but not often enough, according to the Old Guy.
I might see if I can't make an Old Man happy this weekend... He would be my SLAVE if I baked him something like this! ;)

Ooo, a "cake mix" formula. Very dangerous as I now always have cocoa and dark chocolate plus milk powder in my wee flat (haven't come across buttermilk powder here).

And I recently found how wonderful it is to freeze skinned bananas. Am now way more likely to use them from frozen then from fresh! Try frozen banana pieces as a day time snack for your darling hordes over summer. but please thaw the bananas if for that utterly huggable sweetheart, Thor

With one exception, my baking is all from scratch, too. Thanks for the mix ingredients.

I don't keep milk powder in the house - is it a necessity to the recipe ?
