Blondies

This is one of my favorite things to make. Few ingredients, little time to mix, short baking time.

It's also my dearly beloved's favorite bar cookie. Moist, flavorful, filled with walnuts. The man can devour an entire pan without assistance in a single evening.

BLONDIES

1 cup packed brown sugar

1 tsp vanilla extract
1 egg
1/2 cup flour
1/4 tsp baking soda
1/4 tsp salt
1 cup walnuts

Stir together the brown sugar, vanilla and egg. Add the flour, soda and salt. Stir in the walnuts. Spread in a greased 8" square pan, and bake in a preheated 350F oven for 18 to 23 minutes. Let them cool before serving. Hide from the walnut fiend in your house.

You could substitute raisins or chocolate chips for part or all of the walnuts in this recipe; that would make this work for Michelle (yeah!) and other non-nut people. They're also good served with ice cream, as a sundae. As for me, I'll keep them filled with walnuts, and hope to get a bite or 2 out of each pan.

Yum, those looks so good. They'd be great with ice cream and I bet Rob could eat a whole pan, too.

I copied this recipe as I've been looking for a good one like this! However, I do think I would substitute pecans for the walnuts as it is my nut of choice for things like this. I have a bible study coming up next week and may try this recipe for then. That way I take them to share them and don't have them all here to tempt me!! Thanks!

I left a 2 lb bag of walnuts at my sons house, so I'm sending him this recipe! He'll love it!
Dang it! I never did anything with the pecans either... *sheesh*

I've never made blondies. If I'm going to bother baking, it usually includes chocolate, but these sound pretty darn good.

Super thanks for the nut free version ideas. I'm thinking white chocolate chips and dried cranberries! Only have the cranberries (Craisins) for now.

My other issue is that there is only me (and carnivore Zebbycat) living in this wee home - I'll have to start feeding and experimenting on my workmates. We've just moved office, and in the new configuration I have 9 new "sitting nearby" workmates to experiment on!!!

These sound really good - I like chocolate myself but DH likes anything but. He also doesn't like walnuts but a raisin substitute would work fine. Gonna have to try this one.

I've got these in the oven right now. The only liquid is vanilla huh? They were very dense I had to really push them around the pan.

We'll see in oh 9 minutes...
