Who else likes to just pick at breakfast? Especially on weekends? Look no further, fellow picky persons; I have your solution. It takes 5 minutes to put together the dough, a few minutes to mix, and half an hour to rise. Total time invested is about an hour; that's OK for me, because I rarely want to eat when I first get up, unless it's a few saltines. Adapted from Beth Hensperger's Bread Machine cookbook, I've made 8 of these in the past 3 weekends, including one which I sent with my son back to Charlotte. Note: He ate nothing but the cake for the 10 hour drive, and couldn't finish it all, and was not hungry when he got back to Charlotte. Yes, it's filling. For normal sized households (as opposed to Marjie sized households), it'll last the whole weekend. Just helping you plan, here.
CINNABUN COFFEE CAKE
Cake:
1 cup warm milk
1-1/2 tsp vanilla extract
1 egg
2 tbsp butter
2-3/4 cups flour
1/4 cup sugar
1 tsp salt
2-1/2 tsp yeast
Topping:
1 stick butter, softened
3/4 cup flour
3/4 cup light brown sugar
1 package instant oatmeal (any flavor) or 1/2 cup oats
1/2 cup chopped pecans
1-1/2 tsp cinnamon
Glaze:
1/2 cup confectioners sugar
1 to 2 tbsp milk or cream
Cake: Soften the yeast in the milk; add the rest of the ingredients to the bowl or bread machine pan, and mix about 10 minutes, until the dough is smooth and elastic. Generously grease a 13"x9" baking pan, and scoop the dough into it (it will be rather wet and sticky). Sprinkle a little flour on top, flour your fingers, and poke that dough until it fills the pan. Let it start to rise while you make the topping.
Topping: Using a mixer at low speed, or a pastry cutter, combine all ingredients until crumbly. Sprinkle atop the cake; the topping will be very very thick and oh-so-good! Let it rise until the topping has reached the top of the pan. Bake at 350F for glass pan (375 for metal pan) for 22 to 25 minutes, until the toothpick inserted in the center comes out clean. Remove and let cool while you mix the sugar and cream or milk. Drizzle the glaze over the cake in an artistic pattern, or, like me, in glumps because that's how it fell, cut the cake and stand back while the stampede occurs.

Can't do breakfast. It's all I can do THREE hours after I rise to choke down a granola bar or something of the like...

Light from the yeast, super yummy from the topping - then you add a drizzle too! Your family is so, so spoiled by this scrumptious concoction.
